  • 1 ripe avocado
  • 4 oz smoked salmon
  • 2 tablespoons cream cheese, softened

  • Lemon wedges for serving
  • Salt and pepper to taste

Instructions

  1. Prepare the Bagels:
    1. Slice the bagels in half horizontally.
    2. Using a spoon or your fingers, gently scoop out the inside of each bagel half, leaving about a 1/4 inch border all around. Set aside the scooped bread for another use or discard.
  2. Toast the Bagels:
    1. Preheat your oven broiler or toaster oven.
    2. Place the scooped bagel halves on a baking sheet, cut side up.
    3. Broil or toast until the edges are crispy and golden brown, about 2-3 minutes. Watch closely to avoid burning.
  3. Prepare the Avocado Spread:
    1. In a small bowl, mash the ripe avocado with a fork until smooth.
    2. Season with salt and pepper to taste.
  4. Assemble the Bagels:
    1. Spread a tablespoon of cream cheese on each bagel half.
    2. Layer on the mashed avocado.
    3. Add slices of smoked salmon on top of the avocado.
    4. Sprinkle capers and red onion slices over the salmon.
    5. Garnish with fresh dill.
  5. Serve:
    1. Place the bagel halves on plates and serve immediately with lemon wedges on the side for squeezing over the top.
