- 1 (28 oz) can crushed tomatoes
- 6 cups chicken broth
- 8 oz broken lasagna noodles
- 2 bay leaves
- Salt and black pepper to taste
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Fresh basil leaves
- Additional shredded mozzarella
- Grated Parmesan cheese
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat
- Add ground beef and cook until browned (8-10 minutes)
- Add diced onion and cook until translucent (5 minutes)
- Stir in minced garlic and cook until fragrant (1 minute)
- Add tomato paste and Italian seasoning
- Cook for 2-3 minutes, stirring constantly
- Pour in crushed tomatoes and chicken broth
- Add bay leaves and red pepper flakes
- Season with salt and black pepper to taste
- Bring soup to a boil
- Add broken lasagna noodles
- Reduce heat and simmer for 8-10 minutes until pasta is tender
- Stir occasionally to prevent noodles from sticking
- In a medium bowl, combine ricotta, Parmesan, and mozzarella
- Season with salt and pepper
- Mix well and set aside
