  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon red pepper flakes
  • 2 tablespoons tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 6 cups chicken broth
  • 8 oz broken lasagna noodles
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh basil leaves
  • Additional shredded mozzarella
  • Grated Parmesan cheese

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat
  2. Add ground beef and cook until browned (8-10 minutes)
  3. Add diced onion and cook until translucent (5 minutes)
  4. Stir in minced garlic and cook until fragrant (1 minute)
  5. Add tomato paste and Italian seasoning
  6. Cook for 2-3 minutes, stirring constantly
  7. Pour in crushed tomatoes and chicken broth
  8. Add bay leaves and red pepper flakes
  9. Season with salt and black pepper to taste
  10. Bring soup to a boil
  11. Add broken lasagna noodles
  12. Reduce heat and simmer for 8-10 minutes until pasta is tender
  13. Stir occasionally to prevent noodles from sticking
  14. In a medium bowl, combine ricotta, Parmesan, and mozzarella
  15. Season with salt and pepper
  16. Mix well and set aside
  17. Ladle hot soup into bowls
  18. Top with a generous dollop of the cheese mixture
  19. Garnish with fresh basil, additional mozzarella, and Parmesan
  20. Serve immediately
