  • 4 boneless skinless chicken breasts (68 oz each)
  • 2 tablespoons fresh sage (finely chopped)
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh rosemary (minced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup apple cider (preferably unfiltered)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • 1/4 teaspoon cinnamon
  • 1 pinch allspice (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound them to even thickness (about 1/2 inch).
  2. Allow chicken to come to room temperature (about 20 minutes).
  3. Combine fresh herbs, minced garlic, salt, and pepper in a small bowl.
  4. Drizzle olive oil over the chicken breasts.
  5. Press herb mixture firmly onto both sides of each breast.
  6. Preheat oven to 375°F (190°C).
  7. Heat an oven-safe skillet over medium-high heat.
  8. Sear chicken for 3-4 minutes per side until golden.
  9. Transfer skillet to preheated oven.
  10. Bake for 15-20 minutes or until internal temperature reaches 165°F (74°C).
  11. While chicken bakes, combine apple cider and honey in a small saucepan.
  12. Simmer over medium heat until reduced by half (about 10 minutes).
  13. Whisk in Dijon mustard, butter, and cinnamon.
  14. Continue simmering until slightly thickened.
  15. Remove chicken from oven and let rest for 5 minutes.
  16. Drizzle with apple cider glaze.
  17. Garnish with additional fresh herbs if desired.
