- 4 boneless skinless chicken breasts (6–8 oz each)
- 2 tablespoons fresh sage (finely chopped)
- 2 tablespoons fresh thyme leaves
- 1 tablespoon fresh rosemary (minced)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup apple cider (preferably unfiltered)
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon butter
- 1/4 teaspoon cinnamon
- 1 pinch allspice (optional)
Instructions
- Pat chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound them to even thickness (about 1/2 inch).
- Allow chicken to come to room temperature (about 20 minutes).
- Combine fresh herbs, minced garlic, salt, and pepper in a small bowl.
- Drizzle olive oil over the chicken breasts.
- Press herb mixture firmly onto both sides of each breast.
- Preheat oven to 375°F (190°C).
- Heat an oven-safe skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side until golden.
- Transfer skillet to preheated oven.
- Bake for 15-20 minutes or until internal temperature reaches 165°F (74°C).
- While chicken bakes, combine apple cider and honey in a small saucepan.
- Simmer over medium heat until reduced by half (about 10 minutes).
- Whisk in Dijon mustard, butter, and cinnamon.
- Continue simmering until slightly thickened.
- Remove chicken from oven and let rest for 5 minutes.
- Drizzle with apple cider glaze.
- Garnish with additional fresh herbs if desired.
